Robert Pendergast, from P.E.I., began cooking professionally in 1991, as well as shucking oysters for the past 10 years. In this time, Robert lived in Montreal, Ottawa, Toronto, Poland, Holland and France where he developed an exciting yet unorthodox repertoire of skills, tastes and experiences. Roberts latest method and appreciation of food is discovering and understanding more about the sources of food, the growers, fishers, producers...and those who love food. As a result, he takes a hands on approach to the making of food, such as farming and selling P.E.I. potatoes, among other things. Currently, Robert is a cook at Oyster Boy on the west end of Torotnto. Teamed up with Laura and Matt, Robert is designing one of a kind dishes for PAPERspace studio at the upcoming event, edges.
